Ginger Beer Plant Fermenting Guide

Ginger Beer Bug is a traditional fermented drink culture used to make naturally fizzy homemade ginger beer with sugar, ginger, lemon, and water.

Step 1: Gather your ginger beer bug brewing supplies

To make ginger beer, you’ll need:

  • Dehydrated Ginger Beer Plant (your pack contains enough for a 500ml or 1000ml batch)
  • Filtered water (non-chlorinated)
  • Sugar (organic white sugar preferred)
  • Fresh ginger juice or finely grated ginger
  • 1/2 slice lemon
  • Optional: 1/2 tsp molasses or rapadura for added minerals
  • A glass jar (avoid metal)
  • A breathable cover (cloth or coffee filter + rubber band)
  • A plastic or wooden spoon
  • A fine-mesh strainer
  • A clean bottle for storing the finished ferment


Step 2: Prepare the sweet ginger mixture

For a 500ml batch, dissolve 3 tbsp sugar in 500ml water.

If using, add 1/2 tsp molasses or rapadura for extra minerals.

Pour the sweetened water into your jar, then add:

  • 3g dehydrated ginger beer plant
  • 1–2 tbsp fresh ginger juice or finely grated ginger
  • 1/2 slice lemon


Step 3: Ferment the ginger beer bug

  • Cover the jar with cloth and secure with a rubber band.
  • Leave at room temperature (20–25°C) for 3–7 days.
  • Stir gently once daily during fermentation.
  • Taste from day 3 — it should be aromatic, gently tangy, and lightly fizzy.


Step 4: Strain and refresh

  • Strain the liquid into a clean bottle — this is your finished ginger beer base.
  • Discard the used ginger and lemon.
  • Reuse the ginger beer plant immediately in a fresh batch using the same recipe above.


Step 5: Bottle and enjoy

  • Pour the strained liquid into a bottle and seal.
  • Refrigerate once ready to drink.
